Summertime Pork and Vegetables is a perfect one pot meal that is cooked in the air fryer.  It is great with fresh garden vegetables and to make when the weather is hot outside.  This recipe is a complete meal that is made in the Air Fryer.  If you don't have an Air Fryer you can use the oven or a really large fry pan.

Ingredients

  • 2 tbsp Olive Oil
  • 4 medium Potatoes Diced
  • 4 6 oz Boneless Pork Loin Chops
  • 1 cup Corn Thawed
  • 1 each Zucchini
  • ¼ cup Onion Sliced
  • tsp All-purpose seasoning
  • 1 tsp Paprika
  • 1 Salt & Pepper to taste

Instructions

  • Slice the potatoes into bite sized pieces. thinner slices will cook faster.
  • Put olive oil, all-purpose seasoning, and paprika into the resealable bag. Mix together then add the potatoes.
  • Cut the pork into 1 inch by 1 inch bite sized pieces. Set aside.
  • Dice the zucchini and onions into bite sized pieces. Set aside.
  • Preheat the air fryer to 400 degrees. Add the potatoes and air fry for about 6-7 minutes. Stir.
  • Add the pork cubes and air fry for about 8-10 minutes. Stir.
  • Add the corn, onion, and the zucchini. Salt and pepper to taste. Air fry for about 5-6 more minutes. Stir.
  • Cook until the potatoes and zucchini are fork tender. Serve immediately.
