Strawberry Chocolate Cheesecake is a no bake cheesecake that can be made quickly without heating up the kitchen and it is packed with deliciousness! It has a chocolate ganache layer, and a cheesecake lay topped with the bright red strawberries. It is as pretty as it is delicious. Maybe it is a little more delicious than it is pretty. You'll need to decide for yourself.
In mixing bowl, whip the cream cheese until smooth.
Add in the vanilla and sugar. Whip it again.
Fold in the sour cream and the whipped topping. Set aside.
Place the chocolate chips and the shortening into a microwaveable bowl. Microwave for 30 seconds and stir. Continuing microwaving in 15 second increments and stirring until the chocolate chips are completely melted.
Put about 2 tablespoons of the melted chocolate into a resealable bag. Set aside.
Let the remaining chocolate chips cool slightly in the bowl on the counter. Stir it occasionally. Don't let it set up.
Measure ⅔ cup of the cream cheese mixture and fold into the slightly cooled chocolate chip mixture.
Spread the chocolate mixture on to the crust. Spread the remaining cream cheese mixture over the chocolate mixture creating two different layers.
Top with the sliced strawberries.
Snip off a corner of the resealable bag of chocolate. Squeeze the chocolate over the top of the strawberries in a pretty zig zag pattern.
Chill for 2 hours. Slice and serve.
