Ingredients

  • 8 oz Pasta uncooked
  • ¾ cup Mayonnaise
  • ¾ cup Sour Cream
  • tbsp Taco Seasoning
  • tbsp Ranch Seasoning Mix dry
  • 15 oz Canned Corn drained
  • 15 oz Black Beans drained & rinsed
  • ½ cup Red Onion diced
  • ½ cup Green Pepper diced
  • 8 oz Cheddar Cheese cubed
  • 5 oz Cherry Tomatoes sliced in half

Instructions

  • Cook the pasta according to package directions. Drain and rinse the pasta with cold water.
  • To make the dressing, in a bowl mix together the mayonnaise, sour cream, taco seasoning and the dry ranch seasoning.
  • In a large bowl gently mix together the cooled pasta and the dressing. Once the pasta is coated with the dressing add in the corn, black beans, diced onion, diced peppers, cubed cheddar cheese and sliced cherry tomatoes.
  • Chill for at least an hour before serving.
