- 1 cup Zucchini sliced
- 1 cup Carrots peeled and sliced
- 2 tbsp Olive Oil
- 1 clove Garlic mince
- Salt & Pepper to taste
Heat up olive oil in a fry pan over medium heat.
Add the sliced carrots. Sauté for 5 minutes. They will be slightly crisp yet.
Add the sliced zucchini. Sauté for 5-8 more minutes or until tender.
Add the minced garlic and salt and pepper to taste. Sauté for 1-2 more minutes.
Serve immediately.
