Pineapple Fruit Salad is a very refreshing and delicious twist on a fruit salad. It's a simple kid friendly recipe that is perfect for a side dish, snacking on, or to take to potlucks and picnics. It's a great kid meal when paired with Pepperoni Pizza Sloppy Joes and Crispy Air Fryer Potatoe Bites.
In a large bowl add the drained mandarin oranges, strawberries and blueberries. Drain the juice from the pineapple tidbits and save the juice. Put the pineapple tidbits in the bowl of fruit.
In a small saucepan put in the reserved pineapple juice, lemon juice, sugar, flour, and egg. Whisk really really well. You do not want any pieces of egg. The color should be a very light yellow.
Once the dressing is mixed really well, bring it to a boil over low to medium heat stirring constantly. Once it boils it will have started thickening.
Remove it from the heat and let it cool. Once it is cool add it to the fruit and give it a toss.
Chill and serve.
