Pineapple Fruit Salad

Pineapple Fruit Salad is a very refreshing and delicious twist on a fruit salad.  It's a simple kid friendly recipe that is perfect for a side dish, snacking on, or to take to potlucks and picnics.  It's a great kid meal when paired with Pepperoni Pizza Sloppy Joes and Crispy Air Fryer Potatoe Bites.

  • 1 15 oz Mandarin Oranges Drained
  • 2 cups Grapes Seedless
  • 1 cup Blueberries
  • 1 quart Strawberries Cleaned and sliced
  • 1 15 oz Pineapple Tidbits
  • ¾ cup Pineapple Juice
  • ¼ cup Lemon juice
  • ½ cup Sugar
  • 1 tbsp Flour
  • 1 large Egg Beaten

Instructions

  • In a large bowl add the drained mandarin oranges, strawberries and blueberries. Drain the juice from the pineapple tidbits and save the juice. Put the pineapple tidbits in the bowl of fruit.
  • In a small saucepan put in the reserved pineapple juice, lemon juice, sugar, flour, and egg. Whisk really really well. You do not want any pieces of egg. The color should be a very light yellow.
  • Once the dressing is mixed really well, bring it to a boil over low to medium heat stirring constantly. Once it boils it will have started thickening.
  • Remove it from the heat and let it cool. Once it is cool add it to the fruit and give it a toss.
  • Chill and serve.
