Repeat until the chocolate is smooth and creamy with no lumps. Do not over microwave it. The chocolate could seize and be dry and clumpy.
Gently pull the stems back and hold the stems or insert a toothpick or fork gently into the top of the strawberries and dip them into the chocolate to coat them. Once dipped, lay them on parchment or waxed paper.
If decorating with white chocolate, in a small microwaveable bowl melt a ¼ cup white chocolate chips with 1 tsp of shortening. Microwave in 15 second increments stirring well between each time until the chips are melted and smooth. You can add food coloring to the melted chips. Use a fork to drizzle the white chocolate onto the berries.
If you are decorating with sprinkles, nuts or candy pieces add them when the chocolate is still slightly warm and not set.
Put in the refrigerator to set. Allow about 30 minutes for the chocolate to set before serving.
Store any extra chocolate covered strawberries in an airtight container.
Notes
You want the strawberries to be dry and at room temperature when adding the chocolate coating. This helps the chocolate adhere to the strawberries.
