Preheat the oven to 375 degrees.
On the baking sheet create 8 rectangles from the two tubes of crescent roll dough by pinching the diagonal perforated seam together.
Filling: in a bowl mix together the chicken, cream of potato soup, cheese, peas & carrots, garlic, and thyme. Add salt and pepper to taste.
Put about ¼ to ⅓ cup of the filling in the center of each rectangle.
To close the pillow, pull up about 6 pieces of the edges to the center, pinch, and secure with a toothpick. You may need to pinch close any seams or cracks.
Bake for 15 minutes or until golden brown. Remove from the oven and brush with butter. Remove the toothpicks and serve immediately.
