On a baking sheet place 2 tablespoons of olive oil.
In a small bowl mix together the panko crumbs and the shredded chaddar cheese. Toss to mix.
Place the fish fillets on the olive oil on the baking sheet. Sprinkle the panko and cheddar cheese mixture on top of the fish completely coating the top of the fillets.
Spray the panko mixture with olive oil or cooking spray.
Bake for 10-15 minutes until the fillets are flaky. Serve immediately.
Notes
To help your fish taste fresher soak the fillets in milk 1-24 hours. Before cooking, remove the fillets from the milk and pat dry with a paper towel. Discard the milk. Prepare the fillets as planned.
