This Tuscan Tortellini is a quick and easy recipe that is full of Italian flavor with prosciutto and cheese stuffed tortellini and a sauce that is garlic, basil, and Roma tomato sautéed in olive oil. Toss these together and top with your favorite Italian cheese. This is simple enough for a weeknight meal yet decadent enough to serve for special occasions.
When I first made this recipe, I was with a friend while we were staying in a mountain cabin. We had a little wine as we cooked and a Julia Childs video playing in the background. Julia was making a pasta recipe as well. Julia was making a lasagna. I had made a half recipe since it was just the two of us and we didn’t want any leftovers. This recipe was perfect! We had so much fun cooking this quick and easy recipe.
Ingredients & Cooking
This recipe starts with Prosciutto & Cheese Tortellini. This pasta can be found in the refrigerated section in your grocery store. It is not in the pasta aisle and not in the freezer aisle. Cook the tortellini according to the package directions.
The sauce is a simply minced garlic sauteed in olive oil and finely diced Roma tomatoes and basil are sauteed together. Sauté the garlic for only a couple of minutes or until the garlic gets lightly golden brown. Don’t want to overcook it, and it gets a bitter taste. To that you will add the diced tomatoes and the basil. Sautee that until the tomatoes are very soft. That will only be a couple of minutes as well. The olive oil becomes very flavorful when everything is sauteed together.
When both the pasta is cooked and the olive oil sauce is fully prepared and cooked, gently toss the two together coating the tortellini with the olive oil and the tomatoes.
Serving
To serve Tuscan Tortellini put the pasta on a platter or on a plate and top it with your favorite shredded Italian cheese. For a perfect meal serve it with a Strawberry Pecan Salad with dinner roll and for dessert a Strawberry Shortcake Baked Alaska.

Tuscan Tortillini
Equipment
- 1 Dutch oven pan
- 1 Large skillet
- 1 Cutting board
- 1 Knife
Ingredients
- 2 10 oz Bags Rana Prosciutto & Cheese Tortellini
- ¼ cup Olive Oil
- 3 Cloves Garlic Minced
- 2 Each Roma Tomatoes Very finely diced
- ¼ Cup Basil Minced fresh or 2 tsp dried basil
- ½ Cup Italian Blend Cheese Shredded
Instructions
- Cook up tortellini according to the package instructions. Drain. Set aside.
- In a skillet add olive oil and heat it up over medium heat.
- Once the oil is heated add the minced garlic and cook for 2-3 minutes or until the garlic is slightly golden brown.
- Add the finely diced tomatoes and the basil. Stir. Be very careful when adding the tomatoes, they will splatter.
- Sautee until the tomatoes are softened.
- Combine the tortellini and the olive oil sauce. Toss together.
- Top with Italian cheese when serving.
