This is the easiest chicken salad you can make. It has chicken breast meat, red grapes, and a creamy mayonnaise dressing topped with lettuce, and all wrapped up in a tortilla shell. It’s cool and it’s a quick refreshing meal that is perfect for work lunches or when you want a quick sandwich meal.
This recipe is very easy, and quick to prepare. It makes only 3 wraps, but you can easily make a bigger batch if you chose to. This recipe can be doubled very easily.
Ingredients & Mixing
This recipe is made using canned chicken. The goal was to have a chicken salad you could just quickly dump everything together. No cooking involved. The canned chicken that gets drained and put into a bowl. To that you add the mayonnaise, sugar, apple cider vinegar, dried minced onion, and salt & pepper to taste. Mix this well. Halve the grapes and add them to the chicken mixture and gently stir them together.
Serving
To serve the Easiest Chicken Salad, use a 10-inch tortilla shell. Place some lettuce leaves and one third of the chicken salad mixture. Wrap it tight like a burrito. I hold them horizontally with the short ends by each of my hands. Fold one long side, tuck the two short sides, and roll it up tightly. Once it’s rolled up, it’s ready to eat. Or you can wrap it in plastic wrap to eat it at lunch time tomorrow. If I’m planning on taking one to work, I will assemble one the evening before.
I like to eat this with Pineapple Fruit Salad or Caramel Apple Cheesecake Salad. Even just plain fresh fruit is a perfect side or carrot sticks.

Ingredients
- 1 7 oz Canned Chicken Breast Drained
- ⅓ cup Mayonnaise
- 1 tsp Sugar
- ½ tsp Apple Cider Vinegar
- ¼ tsp Dried Minced Onion
- 1 Salt & Pepper to Taste
- ⅔ cup Red Grapes Halved
- 3 10-inch Tortilla Shells
- 3 Lettuce Leaves
Instructions
- Put the drained chicken into a medium bowl and break it apart with a fork.
- To the bowl add the mayonnaise, sugar, Apple Cider Vinegar, minced onion, and salt & pepper to taste. Mix well.
- Fold the halved grapes in with the chicken mixture.
- Place some lettuce leaves on the tortilla shell. Add one third of the chicken salad mixture. Wrap it up like a burrito.
- Serve immediately.
