Summertime Pork and Vegetables

Summertime Pork and Vegetables is a perfect one pot meal that is cooked in the air fryer.  It is great with fresh garden vegetables and to make when the weather is hot outside.  This recipe is a complete meal that is made in the Air Fryer.  If you don’t have an air fryer you can use the oven or a really large fry pan.

Ingredients

The flavors from my All-Purpose Seasoning and paprika.  The olive oil helps those seasonings stick to the potatoes and crisp them up.  I put these into a resealable bag mix them up well then add the sliced potatoes.

I like to use baby Yukan gold potatoes.  As you likely know by now, Yukan’s are my favorite.  Please, use whatever potatoes you have and enjoy.

The pork is boneless pork loins.  This type of meat is often times on sale at our local grocery store for $1.99 to $2.99 per pound.  That’s a good price for meat without bones and little fat.  When it’s on sale, I pick a lot of it up and freeze it for later.  Since I have plenty on hand, I am always trying to think of ways to cook and serve this type of meat that is different.  I don’t want it to seem like the same thing all the time.

The other ingredient s are fresh zucchini, corn, and onions.   In this recipe we had fresh sweet corn a couple of nights before.  I planned ahead and cooked an extra ear to use in this recipe.  I used fresh zucchini and red onion that I cut up into bite sized pieces.

Cooking

This recipe will have many ingredients that I add at different times since they cook at different speeds and I want optimal flavor and texture with anything being over cooked, dry, or mushy.  This is the part that makes this recipe seem a bit or work.  You’re stirring and adding ingredients frequently.

So let’s start the cooking process.

Preheat your Air Fryer so it’s hot for crisping up the food.  Then you can add the potatoes and let them cook.  While they are cooking, cube the pork and slice the other ingredients into bite sized pieces.  Set them all aside to wait to be added when their time comes.

Potatoes are added first.  The potatoes will cook for a while and get about half cooked before you will add the pork.  After the pork is about half cooked you will add the zucchini, corn, and the onion.  Each time you add more ingredients you will give it a good stir to incorporate the flavors.

Serving

Once the Summertime Pork and Vegetables cooking is completed it is ready to serve immediately.  I like to serve this with Blueberry Fluff or with Fresh Strawberry Pie for dessert.  A Strawberry Pecan Salad would be delicious too!

Equipment

Ingredients

  • 2 tbsp Olive Oil
  • 4 medium Potatoes Diced
  • 4 6 oz Boneless Pork Loin Chops
  • 1 cup Corn Thawed
  • 1 each Zucchini
  • ¼ cup Onion Sliced
  • tsp All-purpose seasoning
  • 1 tsp Paprika
  • 1 Salt & Pepper to taste

Instructions

  • Slice the potatoes into bite sized pieces. thinner slices will cook faster.
  • Put olive oil, all-purpose seasoning, and paprika into the resealable bag. Mix together then add the potatoes.
  • Cut the pork into 1 inch by 1 inch bite sized pieces. Set aside.
  • Dice the zucchini and onions into bite sized pieces. Set aside.
  • Preheat the air fryer to 400 degrees. Add the potatoes and air fry for about 6-7 minutes. Stir.
  • Add the pork cubes and air fry for about 8-10 minutes. Stir.
  • Add the corn, onion, and the zucchini. Salt and pepper to taste. Air fry for about 5-6 more minutes. Stir.
  • Cook until the potatoes and zucchini are fork tender. Serve immediately.
