Strawberry Chocolate Cheesecake

Strawberry Chocolate Cheesecake is a no bake cheesecake that can be made quickly without heating up the kitchen and it is packed with deliciousness!  It has a chocolate ganache layer, and a cheesecake lay topped with the bright red strawberries.  It is as pretty as it is delicious.  Maybe it is a little more delicious than it is pretty.  You’ll need to decide for yourself.

Cheesecake Layer

This recipe has all the ingredients of your classic no bake cheesecake and added chocolate chips and strawberries.  This means it will be simple to create.

Place a room temperature brick of cream cheese in the mixing bowl and whip it until it is smooth.  This process will make your cream cheese smoother and creamier.  Once it is smooth, you will add vanilla extract.  I use homemade vanilla extract.  It’s a simple fun thing I do that can enhance the vanilla flavor.  For more information check out my blog on Homemade Vanilla.

With the vanilla add the sugar and sour cream.  Give them a good mix with the mixer.

After these ingredients are fully incorporated fold in the whipped topping.  I prefer not to use the mixer; it can deflate the whipped topping.  Once this step

Chocolate Ganache Layer

I think the chocolate ganache layer is the best part and it’s easy.

Put the chocolate chips and the shortening into a microwave safe bowl.  Microwave them for 30 seconds, stir.  Then microwave for another 15 seconds and stir.  Repeat in 15 second increments and stirring until the chips are completely melted.  Eash time after stirring they will melt a little more.

Take a couple of tablespoons of the melted chocolate mixture and put it in a resealable bag.  You’ll use this later.

Now our chips are melted, but they need a little time to cool, on the counter before you can do the next step.  While they are cooling, stir the chocolate occasionally and make sure it doesn’t set.  You want it to cool enough so it doesn’t soften or melt the cheesecake layer.  It will take maybe 20 minutes or so.

Assembling

While your chocolate is cooling, slice the strawberries.  Then set them aside for a little bit.

Once the chocolate is room temperature, mix part of the cheesecake mixture.  Give it a good stir, fully incorporating the two.

Now all the pieces of the Strawberry Chocolate Cheesecake are made and we’re ready to assemble it.  Spread the chocolate ganache layer onto the graham cracker crust.  Now top the chocolate ganache layer with the rest of the cheesecake layer.  You do not need to chill the chocolate layer before adding the cheesecake layer.

Lay the sliced your strawberries over the cheesecake.  Lastly, snip off a small corn of the resealable bag of melted chocolate.  Squeeze the bag and drizzle the chocolate over the strawberries.  I do this in a zig zag pattern.

Chill for about 2 hours before serving.

Serving

When I serve a slice of Strawberry Chocolate Cheesecake my guest’s eye light up.  It looks delectable and it is!  Your guests don’t need to know it was really easy to create this masterpiece.

This pie is perfect anytime of the year and with any type of food.  Take it to a potluck.  You’ll go home empty handed.  There will not be leftovers.

I often serve this with grilled meals.  Grilled Hawaiian Chicken Breasts with Boiled Garlic Mashed Potatoes and Parmesan Asparagus or Teriyaki Pork Chops with Twice Baked Mashed Potatoes and Chili Lime Sweet Corn.

Equipment

Ingredients

  • 1 8 oz Cream cheese room temperature
  • 1 tsp Vanilla
  • ½ cup Sugar
  • ½ cup Sour Cream
  • 1 8 oz Whipped topping
  • 1 cup Milk Chocolate Chips
  • 2 tsp Shortening
  • 1 6 oz Ready Made Graham Cracker Crust
  • 2 cups Strawberries sliced

Instructions

  • In mixing bowl, whip the cream cheese until smooth.
  • Add in the vanilla and sugar. Whip it again.
  • Fold in the sour cream and the whipped topping. Set aside.
  • Place the chocolate chips into a microwaveable bowl. Microwave for 30 seconds and stir. Continuing microwaving in 15 second increments and stirring until the chocolate chips are completely melted.
  • Put about 2 tablespoons of the melted chocolate into a resealable bag. Set aside.
  • Let the remaining chocolate chips cool slightly in the bowl on the counter. Stir it occasionally. Don't let it set up.
  • Measure ⅔ cup of the cream cheese mixture and fold into the slightly cooled chocolate chip mixture.
  • Spread the chocolate mixture on to the crust. Spread the remaining cream cheese mixture over the chocolate mixture creating two different layers.
  • Top with the sliced strawberries.
  • Snip off a corner of the resealable bag of chocolate. Squeeze the chocolate over the top of the strawberries in a pretty zig zag pattern.
  • Chill for 2 hours. Slice and serve.
