Slow Cooker Meatloaf and Potatoes

Slow Cooker Meatloaf and Potatoes is a complete meal that can be put into the slow cooker before you go to work, and it is done at dinner time.  This is so convenient for those busy weeknights!

This is a staple for us when the grandkids are in soccer.  We can work all day, go to soccer, and come home to warm meal.

Ingredients

This meatloaf recipe is the same as my Quick & Easy Meatloaf recipe except it is 2 pounds.  It needs to be 2 pounds to work with the needed cooking time.

Since the meatloaf cannot be drained, I suggest you use an 80% lean ground beef or higher.

Use the old-fashioned oatmeal and not the quick oatmeal.  The old-fashioned oatmeal will create a better textured meatloaf.

The eggs help bind the meatloaf together and the milk makes the meatloaf moist.  The other ingredients such as the diced onions or onion flakes, and thyme could be omitted if you wanted.  These ingredients are easy enough to modify to suit your family’s tastes.

Use small potatoes or baby potatoes.  When I made the potatoes in the picture, they were a little bit too big and some of the center ones came out a little bit firmer than we prefer.

Mixing It

In a medium mixing bowl mix the ground beef, oatmeal, onion flakes, thyme, egg, milk, and salt and pepper to taste.

Grease your slow cooker pot.

Tear off two sheets of aluminum foil and arrange the sheets so they overlap in the center like the photo below.

Place the foil in the slow cooker pot so it is only on one half of the slow cooker.  Add the meatloaf meat and press it to a mounded shape.  Take the ends of the foil and lightly fold them over the meatloaf like shown below.  Add the potatoes on the other half of the slow cooker.  Try to place them loosely for heat to get around the potatoes.

Slow Cooking

Turn your slow cooker onto the warm setting.  My slow cooker is pictured below, and it has a warm setting that is lower than low.  I cook the Slow Cooker Meatloaf and Potatoes on warm for at least 10 hours.  Nothing was burnt or over cooked.  Since slow cooker can vary in heating try the lowest setting on your slow cooker.  For the first time to make this in your slow cooker, you may want to try it when you’re home and you can watch how your slow cooker works with this recipe.

While your meal is cooking mix the ketchup, mustard, and brown sugar together in a small bowl.  About 1 hour to 1 1/2 hours before you plan to eat pour the sauce on top of the meat loaf and add the butter and the All-Purpose seasoning to your potatoes and gentle give the potatoes a mix.  Place the lid back on and let them heat up until it is time to eat.

Serving

Once the potatoes are fork tender and the meatloaf is not pink inside you are ready to eat.  I like to serve this with Cranberry Almond Green Beans, plain green beans, or Broccoli made in the Air Fryer.

Ingredients

  • 2 lbs Ground beef, 80% lean or greater
  • cups Old fashioned oatmeal
  • 1 tsp Dried Onion Flakes
  • 2 large Egg
  • 1 cup Milk
  • ¼ tsp Thyme, optional
  • 1 Salt & Pepper to taste
  • 1 cup Ketchup
  • 2 tbsp Brown sugar
  • 2 tsp Mustard
  • 8 servings Small Potatoes
  • 2 tbsp Butter
  • 1-2 tsp All-purpose seasoning

Instructions

  • Grease the slow cooker pot with cooking spray or grease.
  • Mix together the ground beef, oatmeal, egg, milk, thyme, onion, and salt & pepper to taste.
  • Take two sheets of aluminum foil and place them on top of each other in opposite directions. Place in half of the slow cooker. That will be your meatloaf half.
  • Place the meatloaf in the foil area in the slow cooker.
  • Clean the potatoes and place in the other half of the slow cooker. Try to place the potatoes as loosely as possible.
  • Set the slow cooker on the lowest setting. I used the warm setting on mine because low is too high for that length of time. Cook on warm for 10-12 hours. 7-8 hours on low, 5-6 hours on high.
  • Make the sauce by mixing together the ketchup, brown sugar, and the mustard. Set aside.
  • About 1 to 1½ hours before you plan to eat, put the ketchup sauce mix on top of the meatloaf. Add the butter and all-purpose seasoning to the potatoes.
  • Once the potatoes are fork tender and the meatloaf is no longer pink inside you are ready to eat.
