With summer comes Tropical drinks!  A Shark Bite is the perfect summer tropical drink for your backyard barbeques and just relaxing on the patio on a lazy afternoon.

I love getting a mixed drink that have the beautiful layers.  I also love pineapple and coconut rum.  So, this is one of my favorite mixed drinks.   I happened to make this as I was making test mixed drinks for a neighborhood picnic.  I decided to try layering this drink, just to see if I could do it and to see how it turned out.  What a success!  I loved it and so did everyone else that I served it too!  It was so pretty and so delicious!

I realized that layering a drink was not practical to serve at our neighbor picnic.  I made pitchers of Shark Bite mixed drinks for the picnic.   That worked out really well.  Oh, I still make this drink, but for smaller gatherings and for at home.

How do you make it?

Well, grab your tumbler of choice and add the ice.  Pour in the pineapple juice and the coconut rum.  Give them a stir.  Then use a spoon, a teaspoon will do.  Holding the spoon upside down against the side the t a slight downward angle, place it just above the pineapple and coconut rum mixture, and slowly pour in the blue curacao over the back of the spoon.  Be very careful not to splash the blue curacao as you pour it.

There it is, a beautiful Shark Bit mixed drink.  It is ready to enjoy!

If you’ve never made a layered drink before, this is a great drink to learn and practice on using the back of a spoon method.  It’s pretty easy and I think you can do it!  If it doesn’t turn out, just stir it up and enjoy it as it is.  It’s great that way too.

  • ounces Coconut Rum
  • 3 ounces Pineapple Juice
  • ounce Blue Curacao

Instructions

  • Put ice in a tumbler.
  • Next, pour in the coconut rum and the pineapple juice and mix together.
  • To create the blue layer place a spoon just on top of the pineapple and coconut rum mixture and touching the side of the tumbler. Very gently pour the blue curacao on the spoon so it slowly pours on top of the pineapple mixture. Do not make any splashes.
  • Serve immediately. If you stir it up, you have a Shark Bite.
