Roasted Cheddar Bacon Potato Rounds

Roasted Cheddar Bacon Potato Rounds are delicious and easy to make.  They are so delicious with good burger off the grill.  However, they do taste great with many meats as well.  Since they are less than 5 ingredients, they’re budget friendly and easy to make.  An added benefit is kids love them too.

Ingredients

The list of ingredients is very short.  It’s potatoes, olive oil, cheddar cheese, and bacon.  The oven roasting process brings out the flavors in the potatoes creating a wonderful taste.

I buy shredded cheese and buy bacon crumbles which helps making these potatoes go really fast.  You can make bacon and crumble it yourself, too.

Roasting

Often times I will use a baking sheet lined with aluminum foil.  This makes clean up a breeze.

Drizzle olive oil on your baking pan and preheat it in the oven.  While that is going on I slice the potatoes into 1/4-inch-thick slices.  Being consistent on the sliced potato thickness helps them cook evenly.  Lay the potato slices single layer on the baking sheet.  You may want to add some salt and pepper.  However, keep in mind they will get some salt from the cheese and the bacon.  And then roast them until they are about halfway done.  Flip the potatoes one-by-one and put them back in the oven until they are fork-tender.  Once they’re tender, sprinkle the cheddar cheese and bacon pieces on each potato round and put them back in the oven for couple of minutes until the cheese is melted.  Sometimes I will sprinkle a few dried parsley flakes over the top just to make them look prettier.

Roasted Cheddar Bacon Potato Rounds are a great side dish or as an appetizer that you really should try.

Equipment

  • 1 Baking pan
  • 1 Cutting board
  • 1 Knife
  • 1 Spatula or Tongs

Ingredients

  • 4 Medium Potatoes
  • ½ cup Cheddar Cheese, shredded
  • 4 strips Bacon, cooked and crumbled
  • 2 tbsp Olive oil

Instructions

  • Cook and crumble the bacon. Set aside.
  • Preheat the oven to 400 degrees.
  • Put olive oil on the baking pan and place in the oven as it preheats.
  • Slice the potatoes into ¼ inch thick slices and lay in a single payer on the backing sheet. Add salt & pepper to taste.
  • Bake for 10 minutes.
  • Remove from the oven and flip each potato. Return to the oven for 10 more minutes or until the potatoes are fork-tender.
  • Sprinkle cheddar cheese and bacon crumbles on each potato round. Put back in the oven until the cheese is melted. Serve immediately.

Notes
