Pineapple Fruit Salad

Pineapple Fruit Salad is a very refreshing and delicious twist on a fruit salad.  It’s a simple kid friendly recipe that is perfect for a side dish, snacking on, or to take to potlucks and picnics.  It’s a great kid meal when paired with Pepperoni Pizza Sloppy Joes and Crispy Air Fryer Potatoe Bites.

Ingredients

There are two parts to this salad, the dressing and the fruits.  There is canned pineapple tidbits that you will need to drain the pineapple juice and save that for the dressing.   The can of mandarin oranges will be drained too.  That liquid is not needed for this recipe.  The strawberries will need to be cleaned and sliced.  The grape and blueberries can be rinsed cleaned as well.  Just make sure they are dry before adding to the rest of the fruit.

For the dressing it needs the reserved pineapple juice, lemon juice, sugar, flour, and one beaten egg.  They can all go into a small saucepan and be whisked really thoroughly.  The dressing a yellowish color and very liquid when it is thoroughly whisked.  You should not see and pieces of egg.  Otherwise, when you heat the dressing they will cook.  You will not want chunks of eggs in the dressing.  But, if you do get a couple of eggs pieces in the cooked dressing, just remove them with a slotted spoon.

Making the Salad

By now you should have a bowl with fruit in it and a saucepan with dressing cooling in it.  Once the dressing has cooled to about room temp it can gently be mixed in with the fruit.

Once everything is mixed together chill in the refrigerator before serving.

Serving the Salad

Pineapple Fruit Salad is great when served as a side dish with Pepper Jam Bacon Cheeseburgers or when you make it a kid friendly meal with Pepperoni Pizza Sloppy Joes and Crispy Air Fryer Potatoe Bites.

  • 1 15 oz Mandarin Oranges Drained
  • 2 cups Grapes Seedless
  • 1 cup Blueberries
  • 1 quart Strawberries Cleaned and sliced
  • 1 15 oz Pineapple Tidbits
  • ¾ cup Pineapple Juice
  • ¼ cup Lemon juice
  • ½ cup Sugar
  • 1 tbsp Flour
  • 1 large Egg Beaten

Instructions

  • In a large bowl add the drained mandarin oranges, strawberries and blueberries. Drain the juice from the pineapple tidbits and save the juice. Put the pineapple tidbits in the bowl of fruit.
  • In a small saucepan put in the reserved pineapple juice, lemon juice, sugar, flour, and egg. Whisk really really well. You do not want any pieces of egg. The color should be a very light yellow.
  • Once the dressing is mixed really well, bring it to a boil over low to medium heat stirring constantly. Once it boils it will have started thickening.
  • Remove it from the heat and let it cool. Once it is cool add it to the fruit and give it a toss.
  • Chill and serve.
