Cinnamon Coffee Cake…. Mmmmm. This Cinnamon Coffee Cake recipe is simple to make and delicious to eat! Its base is a yellow cake mix that you add a box of dry instant pudding mix and other ingredients. It is super moist and flavorful. Another added benefit from baking this coffee cake is the wonderful smell of vanilla and cinnamon smell that will fill your kitchen.
I keep a yellow cake mix and a box of instant pudding on hand. You just never know when you might need to come up with a dessert or a cake. This one can be made in about an hour, and it can be served warm. And best of all, there is no frosting. Once it’s baked, it’s done.
The ingredients
The ingredients in the recipe are very basic. Most of them you will have on hand. I use my homemade vanilla extract in this recipe, too. I think that bring the flavors up to another level. The recipe calls for vanilla flavored pudding, but you can substitute any other flavor of pudding. I have used, French vanilla, white chocolate, and the cheesecake flavored instant puddings. They have all worked great!
- Yellow cake mix
- Instant Vanilla Pudding, dry
- Eggs
- Vegetable oil
- Water
- Vanilla extract
- Butter extract
- Sugar
- Cinnamon
Mixing the cake
Mixing the batter is simple. However, since it is a lot of mixing, I recommend using an electric mixer. I have a 5 qt KitchenAid mixer. I can add the ingredients and work on something else in the kitchen while the mixer is going. This is a time savings for me since I often bake while I am making dinner or unloading the dishwasher.
The eggs need to be added one at a time and mixed very well. The batter should change color and get shiny or glossy looking between each egg. Then the extracts are added and it is mixed very well again for about 3-4 minutes.
Baking the cake
Once the batter has been added to the 9×13 baking pan the sugar and cinnamon mixture should be sprinkled on the top of the batter. Then I use a butter knife to swirl the cinnamon and sugar with the batter. It is OK if there is still some dry cinnamon and sugar on the top of the cake. As it bakes that will adhere to the top of the cake.
Then the cake is baked for 30-35 minutes. Insert a toothpick into the center of the cake. When you remove it, it should come out clean, with no cake batter. If you don’t have any toothpicks, no problem. Another way to check if the cake is done baking is see if it has pulled away from the sides of the baking pan. Then it is done too.
Serving the cake
If I am serving this to dinner quests, I like a pretty presentation. I enjoy the ooh aah factor of pretty desserts. This can easily be achieved for this Cinnamon Coffee Cake. Even though the name may sound a bit boring, it is not a boring dessert to serve. A little whipped topping and a light dusting of ground cinnamon and it’s ready!

- 1 Mixer
- 1 Rubber spatula
- 1 9x13 inch cake pan
- 1 Small bowl, 1 cup size
Ingredients
- 1 Box Yellow cake mix
- 1 Small box Instant Vanilla pudding, dry
- 4 Large Eggs
- 1 tsp Butter extract
- 1 tsp Vanilla extract
- ¾ Cup Vegetable Oil
- ¾ Cup Water
- ¼ Cup Sugar
- 2 tsp Cinnamon
Instructions
- Preheat the oven to 350 degrees.
- In a mixing bowl add cake mix, dry pudding, water, and oil.
- Add eggs one at a time mixing very well. Batter should be smooth and shiny before adding the next egg. Repeat until all eggs have been added.
- Add the flavorings and beat for 3-4 more minutes.
- Grease a 9x13 inch baking pan. Pour the batter into the baking pan.
- Mix together the sugar and the cinnamon.
- Sprinkle the cinnamon and sugar mixture on the top of the cake batter.
- Run a knife through the cake batter and the cinnamon and sugar. Swirling them together.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool slightly before serving.
