Mandarin Corn, a blend of sweet and savory

Mandarin corn is a little bit is sweet and a little bit of savory blended together.  It is a very quick easy way to bring your everyday corn to a holiday spectacular with minimal effort.  And it looks pretty with other dishes, too.

Ingredients

I grew up eating locally grown sweet corn.  So, I am picky about my corn.  My mom and I would process the fresh sweet corn and freeze it.  It was always quite a task to do, but it only took an afternoon, and we had really good, sweet corn all year long.  I did the same for my family.  There have been a few years I didn’t, and each time I regretted it.

This recipe uses frozen corn, but canned corn could be used as well.  Use what you have and what is your preference.

This recipe has some unlikely ingredients to put into the corn.  For example, canned mandarin orange segments, dried cranberries, and sliced almonds.   Trust me on this one, they are so delightful together.  They give corn a new twist that is tasteful, yet a flavorful side dish for many meals.

One of the things I like about the ingredients for this recipe, is I can always have them on hand.  They are pantry staple items for me.  And how do I keep the sliced almonds fresh so long?  I keep them in the freezer and use what I need and put them back in the freeze.  They will keep good for many months this way.

Cooking 

This part is easy.  Heat up the corn in a small saucepan on the stove.  Once it’s hot, I add in the other ingredients.  You will need to lightly stir them to not break up the mandarin orange segments too much.   Then allow the other ingredients to heat up.  It’ll only take a couple of minutes and it’s ready to serve immediately.

Serving

This side dish works well with many other side dishes and main dishes.  I love recipes that have that type of versatility.  It’s pictured with Honey BBQ Pork Chops and Lightly Seasoned Rice.  It’s great with Roast Beef and Creamy Garlic Mashed Potatoes.  It would be great served with a holiday meal.  Sometimes it’s nice to prepare an easy stovetop side dish that can be prepared quickly.  And it’s handy to save space in your oven for the main dish.

Try Mandarin Corn with your next weeknight meal or holiday meal, maybe with your ham for Easter or Christmas.  Save it to serve with your next Thanksgiving Turkey.  It’s a wonderful Fall dish too.

Ingredients

  • 2 cups Frozen Sweet Corn
  • 1 11 oz Mandarin Orange Segments Drained
  • ¼ cup Dried cranberries
  • 2 tbsp Sliced Almonds
  • 1 tbsp Butter
  • Salt & Pepper to taste

Instructions

  • In a saucepan, cook the corn according to package instructions.
  • While the corn is cooking drain the mandarin orange segments. Set aside.
  • Once the corn is cooked, add the remaining ingredients including the mandarin orange segments, and cook on low to medium heat for 2-3 minutes or until everything is hot. Stirring it a couple of times, very gently to avoid breaking up the mandarin orange segments.
  • Put into a serving bowl and serve immediately.
