There’s something truly special about an Herb Roasted Turkey filling your home with warm, savory aromas on Thanksgiving Day. One of the things I love most about roasting a turkey is how simple it can be when you break the process down. Fresh herbs do most of the heavy lifting, and the steam from the chicken broth keeps the meat moist all through roasting.   • 1 medium onion, rough cut
  • 0.5 oz thyme, divided
  • 0.5 oz sage, divided
  • 4 tbsp butter
  • 2 cloves garlic, rough cut
  • Salt & pepper to taste
  • 14 lb turkey, thawed
  • 1¼ cups chicken broth
  • Olive oil

Instructions

1. Prep the oven and turkey
Preheat the oven to 325°F. Remove the neck and giblets from the turkey cavity. You can place them in the bottom of the roasting pan for added flavor or save them to make turkey stock later.

2. Build the flavor base
Separate about 4 sprigs of thyme and several sage leaves and set them aside. In the roasting pan, add the onion, remaining thyme, sage, garlic, butter, salt, and pepper. No need to stir—these aromatics will infuse the broth and steam the turkey beautifully.

3. Prepare the turkey
Place the turkey breast side up in the pan. Gently lift the skin and tuck the reserved thyme and sage leaves directly onto the breast meat for deep herb flavor. Rub or spray olive oil all over the skin to help it crisp up later.

4. Start roasting
Loosely tent the turkey with aluminum foil. Bake at 325°F, inserting a meat thermometer into the thickest part of the thigh. Roast until it reaches an internal temperature of 165°F, or follow the recommended cooking time based on your turkey’s weight.

5. Baste and brown
Baste the turkey every hour. During the final hour, remove the foil so the skin can turn golden. Check the color every 20 minutes, and once it reaches your desired level of golden perfection, tent it again and continue roasting until fully done.

6. Rest and serve
Let the turkey rest for 45 minutes before carving. Once sliced, spoon some of the flavorful broth from the pan over the meat to keep it moist until serving. Don’t forget to reserve some of those drippings—they’re perfect for making gravy using the 1-2-2 method.
