🍂 Pumpkin Crisp – A Cozy Twist on Pumpkin Pie

If you adore the flavors of pumpkin pie but seek a delightful variation, this Pumpkin Crisp is your perfect match. With its creamy pumpkin base and a buttery, oat-streusel topping, it’s a heartwarming dessert that captures the essence of fall in every bite.

Why Choose Pumpkin Crisp Over Pumpkin Pie?

While pumpkin pie is a classic, sometimes a change is refreshing. The crisp topping adds a delightful crunch, and the absence of a pie crust makes it simpler to prepare. Plus, it’s just as delicious served warm with a scoop of vanilla ice cream or chilled with a dollop of whipped cream.

Ingredients

  • 1 (15 oz) can Pumpkin Puree
  • 2 large Eggs
  • 1 (14 oz) can Sweetened Condensed Milk
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Ground Cinnamon
  • 1 cup Old Fashioned Oatmeal
  • ½ cup All-Purpose Flour
  • 1 cup Brown Sugar
  • ½ cup Butter, room temperature
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • ½ tsp Baking Powder

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8 or 9×9 baking dish.
  2. Blend together the pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and cinnamon until smooth.
  3. Pour the pumpkin mixture into the prepared baking dish.
  4. In a separate bowl, combine the oatmeal, flour, brown sugar, butter, baking soda, salt, and baking powder until the mixture resembles coarse crumbs.
  5. Sprinkle the oat mixture evenly over the pumpkin layer. It’s okay if some of the topping sinks into the pumpkin.
  6. Bake for 45–50 minutes, or until the center is set and doesn’t jiggle.
  7. Serve warm or at room temperature with ice cream or whipped topping.
