Hearty Beef & Potatoes Casserole

Hearty Beef & Potatoes Casserole is a slow cooker meal that can cook all day.  After your busy day you can come home to complete meal that is ready to eat.

Ingredients

First, you’ll add the ground beef to the pot and simply break it apart.  Since the ground beef is not browned, I recommend using ground beef that is 80% lean or leaner.

The instant rice can be white or brown.  I typically use brown rice, but either type rice will work.

For seasoning I recommend using my All-Purpose Seasoning.  It’s a convenient way to quickly add seasoning to a dish.  This seasoning goes well with many dishes.  You can just add it and a little bit a thyme, to create a new flavor for the dish.

The potatoes will need to be cut into bite sized cubes.  I cut them a little larger, so they take longer to cook.  The potatoes should be rinsed off after slicing.  This removes some of the starch from the potatoes and it will help reduce the amount of discoloring that can happen when they sit in a slow cooker all day.  It will not affect the taste at all.  It’s just the visual of the meal.

I also cut the carrots into large cubes, so they take longer to cook too.

I like to dice the onions rather small.  You can get the flavor without the pieces of onion bits.  They’re hardly noticeable for those that do not are for chunks of onion bits.

The peas are frozen when they’re added.

Everything will be topped with a can of condensed tomatoes soup to create a tomatoey sauce for the casserole.

Assembling

This is one of the best parts pf this recipe.  Everything gets added in layers and nothing gets stir or mixed.  This is the order I added everything:

  • Ground beef, it is just broke apart and in the bottom of the slow cooker.
  • Instant rice sprinkled on top of the ground beef.
  • All-Purpose Seasoning, need to season in layers.
  • Onion
  • Carrots
  • Peas
  • Potatoes
  • Tomato soup is undiluted and poured on top of the potatoes.
  • All-Purpose Seasoning, again, we need to season in layers.
  • Thyme

Cooking

Set your slow cooker on low and let it cook all day.  When it’s time to eat, it’ll be ready.  How easy is that?!

Serving

This is a Hearty Beef & Potatoes Casserole that is perfectly paired up with a warm slice of garlic bread or with Strawberry Fluff Salad.  Both the garlic bread and the Strawberry Fluff Salad are simple to make and can be prepared in advanced.  This is casserole is complete and flavorful just on it’s own too.

Equipment

Ingredients

  • 2 lbs Ground beef 80% lean or more
  • ½ cup Instant rice
  • 1 tsp All-purpose seasoning
  • ½ medium Onion diced
  • 4 medium Carrots
  • ¾ cup peas frozen
  • 6 medium Potatoes cubed
  • 1 can Condensed Tomato Soup undiluted
  • 1 tsp All-purpose seasoning
  • tsp Thyme dried
  • 1 Salt & Pepper to taste

Instructions

  • Coat slow cooker with cooking spray or grease.
  • Dice onions.
  • Cut carrots into large pieces.
  • Cube potatoes into larger bite sized cubes. Rinse the potatoes after cubing them. This will remove some of the starch and help reduce the discoloration of the potatoes.
  • Put the raw ground beef to the bottom of the pot breaking it up in the smaller pieces. Do not brown it.
  • Layer all other ingredients in the order listed sprinkling evenly over the previous layer. Adding the condensed tomato soup on top of the potatoes. Do not dilute the soup. Do not stir or mix anything as they are added.
  • Set slow cooker on low and let the meal cook for 8-10 hours.
  • Serve immediately.

Notes

Nutritional information is an estimate.  It will vary based the brands of ingredients used and on your cooking methods.
No liquids get added.  The rice absorbs the liquid from the ground beef, the condensation from in the slow cooker as well as the undiluted tomato soup.
Cutting the carrots and the potatoes helps the food cook longer for all day cooking in the slow cooker.  Cutting these smaller can shorten the cooking time.
