Healthy Chili Lime Chicken Breast is very flavorful and very delicious.  And what makes it even better is that it is so quick to put together and easy to make with only 5 ingredients.  That’s including the chicken!  This makes it a recipe that can be put together quickly to marinade in the morning before you head to work and quickly put on the grill as soon as you get home.

Ingredients & Marinating

The marinade is very basic with ingredients you most likely have on hand.  I really like recipe like that.  Recipe that do not have so many special ingredients to buy.

Back to the marinade.  Marinades have 3 basic ingredients, an oil, an acid, and flavoring.  The oil helps it adhere to the meat.  The acid tenderized the meat, and the flavors are just that.  It gives your meat it’s flavor.

The oil is olive oil, the acid is the lime juice, and the minced garlic and taco seasoning are the flavorings.

The amount of time you marinade your meat will affect the amount of flavor your get and how much tenderizing the marinade does.  The denser the meat the longer you will need for the meat to absorb the flavors and the longer it will take for the acid to tenderize the meat.  Marinading longer is not always better.  If you over marinate your meat, it can break down too much and the texture can get mealy.  Read and follow the directions for the recipe.

Grilling

Once your grill is preheated to a medium heat you can add your chicken breasts.  Grilling times will vary because grill temps vary, and the thickness of your chicken varies quite a bit.  We usually grill chicken breasts 15-20 minutes.  Flipping once during the cooking process.

Once they are done grilling and no longer pink inside, they can be removed from the grill and served immediately.

Serving

To me, Healthy Chili Lime Chicken Breasts is a very summery tasting way to make grilled chicken breasts.  So, I like to serve it with some grilled vegetables like Grill Parmesan Asparagus and Strawberry Pecan Salad.

In the picture it is served with Spinach Mashed Potatoes and grilled carrots.  That was a very tasty meal……..

Equipment

Ingredients

  • 4 each Boneless Skinless Chicken breasts
  • 1 tsp Garlic minced
  • ¼ cup Lime Juice
  • 1 tbsp Taco Seasoning
  • 2 tbsp Olive Oil

Instructions

  • To make the marinade, combine the garlic, lime juice, Taco Seasoning and Olive oil to a bowl or resealable bag. Mix well.
  • Put the chicken breasts and the marinade and marinade for 2-12 hours. The longer the time the more flavor the chicken will absorb.
  • Preheat the grill to a medium heat. Place the chicken breasts on the grill and grill about 20 minutes or until no longer pink inside, turning halfway through grilling. Grilling time can vary based on grill temperatures and the thickness of your chicken breasts.
  • Put the chicken on a platter and serve immediately.
