Grilled Hawaiian Chicken Breasts is the most delicious way to prepare and enjoy chicken breasts with pineapple. This recipe is great for a summer cookout with family and friends. It is simple enough for weeknights and yet it is special enough to serve guests.
Ingredients
The ingredients are very basic and ones you most likely have on hand. It is boneless skinless chicken breasts that are marinaded with seasoned pineapple juice. The pineapple rings will be grilled to golden brown and served with the chicken breasts. I love the flavor combination of the slightly sweetness from the pineapple with the juicy grilled chicken breast. Mmmm, it’s so good.
The recipe calls for a 15 z can of pineapple rings. You will separate the pineapple rings and the pineapple juice. The juice will be used in the marinade and the rings will be save to grill.
The seasonings for the marinade are olive oil, the pineapple juice, seasoned salt, lemon pepper, garlic powder, paprika, parsley flakes and salt. They get mixed together and the chicken is added. Then they marinate for 2 hours up to 12 hours.
Here’s a little tip. Don’t over marinate chicken. If you do the acid in the marinade breaks the chicken down too much and it can get mushy.
Grilling
Grill the chicken breasts until they are no longer pink inside. This grilling time will vary due to the heat of your grill and the thickness of the chicken breasts. I think the heat outside can make a difference too. For us it is around 20 minutes, and the chicken gets flipped about halfway through the grilling process.
Towards the end of your grilling time, you will add the pineapple rings to the grill. They will take about 1-2 minutes per side to get the beautiful golden brown grill marks. Flip them once during their grilling time too.
Serving
Put the grilled chicken breasts on a serving platter and top with the pineapple rings. You will have extra pineapple rings, but don’t worry. Each guest will take a couple of extra pineapple right and eat it with their chicken.
I like to serve Grilled Hawaiian Chicken Breasts with Seasoned Rice and Grilled Parmesan Asparagus or with Sour Cream Garlic Mashed Potatoes and grilled corn on the cob. That recipe will be coming soon.
Happy Grilling!
