Garlic Parmesan Fried Corn is a quick and an easy corn recipe that gets fried creating a delicious caramelization on the kernels. It is so easy make, and it tastes great with many different meats. It’s an easy way to dress up plain corn with minimal extra time.
I am a bit of a sweet corn snob. In the area we lived in Iowa the soil is really good fertile black soil. The sweet corn is naturally very sweet with soft tender juicy kernels. So many people grow sweet corn in that area that it is easy to get. I lived in town, so I never grew my own. However, there were many people that I could buy the corn from them and freeze it for the next year or more. Once you’re used to that level of deliciousness in corn, it is extremely difficult to find a store-bought corn that is as flavorful.
I have had some delicious comparable corn in Idaho too. It is likely this summer that I will be freezing corn. It’s a lot of work, but so worth it to me. When I do this, I’ll share that with you. Stay tuned if this interests you.
Now back to Garlic Parmesan Fried Corn.
Ingredients
Use frozen sweet corn that is drained really well, or you can use a canned corn that is drained really good. It is important to drain the corn well to get a good fry on it. You want to fry the corn, not steam it. With any extra moisture it will steam and not fry. You’ll fry it in butter and with the minced garlic.
Cooking
Melt the butter in a medium sized frying pan on medium to high heat. Add the corn once the butter is melted. Then fry the corn until it is a golden-brown color. You want the caramelization that you get from the frying.
Once the corn is a golden-brown add in the minced garlic and sauté until the garlic is softened. Salt and pepper it to taste.
Put the corn in a serving bowl and top with the finely shredded parmesan cheese and sprinkle with parsley flakes.
Serving
Garlic Parmesan Fried Corn pairs up great with Sweet Tangy Barbeque Meatballs and Boiled Garlic Potatoes or with Marinated Steak Cubes and Spinach Mashed Potatoes.
It is pictured with Ground Beef and Rice Skillet and Cheesy Mashed Potatoes. Both of these will be blogged in the next 1-2 weeks.
