Fast & Easy Ground Beef Stroganoff

Ground Beef Stroganoff

This Ground Beef Stroganoff recipe is fast and easy as well is delicious!  It is a budget friendly recipe that kids love.  This recipe is sure to become a weeknight favorite for your family.

This is very similar to a boxed meal you can buy, but it tastes so much better and has a lot less sodium and preservatives in it.  You feel better about serving this to your family.

Ingredients

This recipe has very common ingredients that you likely have on hand.  For me these ingredients are pantry and refrigerator staples.  So as long as I have thawed ground beef to work with I can cook it up quickly.

I use egg noodles, but you could substitute any other type of pasta, like a macaroni pasta.

Any type of ground beef could be used since you’ll be draining it anyway.  I like recipes where I can use up whatever ground beef that is on sale.

The onion, garlic, beef bouillon, mustard, Worcestershire sauce help give it some flavor that will be slightly different than a typical gravy would have.  Then the sour cream as a little bit of that creaminess to the Ground Beef Stroganoff.  If you didn’t have sour cream, you could substitute plain Greek yogurt.  If you didn’t tell anyone, no one would know you made a substitution.

Cooking

Start boiling the water to make your egg noodles.  Prepare the egg noodles according to the package directions.

While the water is heating up for your noodles, get a large skillet heating up with olive oil to sauté the diced onion and the garlic.  This helps infuse the flavors into the olive oil.  Once they have been sauteed remove them from the pan and set aside.  To the skillet add the ground beef and brown it.  Once it is fully cooked you can drain it and add it back to the skillet with the onions, bouillon cube, mustard, and Worcestershire sauce.  Cook it until the bouillon cube is dissolved and mixed in.

In a small bowl mix together the water and the cornstarch.  Once that is combined and smooth pour it into the skillet.  Stir it constantly because it will start to thicken up.  Now that is has thickened up stir in the sour cream.

By now your egg noodles should be cooked.  Add the egg noodles and the meat mixture together and stir well.

Serve immediately.

Serving

When I serve this type of meal to my family, I like to add bread of some sort.  If I didn’t my husband would get a slice of bread and butter it to eat with his Ground Beef Stroganoff.  Which is why I will often make Garlic Bread to serve with it.  I can often pick up loaves of day-old French bread for less than $.50 a loaf.  That really makes this a budget friendly meal for a family.  And if I’m feeling like we need something extra to go with, it I’ll make Broccoli in the Air Fryer, Strawberry Fluff Salad or Grape Salad.

Ingredients

  • 1 12 oz pkg Egg Noodles
  • 1 tbsp Olive Oil
  • ½ medium Onion dices
  • 2 cloves Garlic minced
  • 1 lb Ground Beef
  • 1 cube Beef Boullion Cube
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire Sauce
  • 1 cup Water
  • 2 tbsp Corn Starch
  • ½ cup Sour Cream

Instructions

  • Cook the egg noodles according to the package directions.
  • While the egg noodles are cooking heat up the oil and add the onions. Cook until translucent. Add in the garlic and stir for a couple of minutes. Remove from the pan and set aside.
  • Brown the ground beef and drain.
  • Add the onions and garlic to the skillet of ground beef, along with the beef bouillon cube, mustard and the Worcestershire sauce. Stir well.
  • In a small bowl mix the water with corn starch and stir well. Set aside.
  • Add in the water and corn starch to the skillet stirring constantly. It should start thickening up. Once it is thickened add in the sour cream. Stir.
  • After the egg noodles are cooked and drained add in the ground beef mixture and stir well.
  • Serve immediately.

Notes

Nutritional information is an estimate.  It will vary based the brands of ingredients used and on your cooking methods.
You can add in mushrooms.  They can be sautéed with the onions and garlic.
