Ham and Zucchini Skillet

Easy Weeknight Ham and Zucchini Skillet is perfect for those weeknight meals that you want to prepare quickly and with very few dirty pots and pans making clean up quickly as well.  This recipe has some ingredients that you can use from your garden for summer freshness, or the ingredients can be bought at the farmers market or the grocery store.

This is the perfect recipe to serve on busy weeknight when there is so much going on.  Some of the ingredients can be sliced and diced up in advanced.  When you need to prepare it, it’s cooking and assembling.

Let’s get started with this recipe.

Ingredients

The ingredient list is relatively short but combined they create a delicious flavor combination.  The ingredients are:

  • Olive oil
  • Carrots
  • Potatoes
  • Onion
  • Garlic
  • Zucchini
  • Ham

Cooking

Slice the carrots and potatoes into smaller bite sized pieces in similar sizes.  This will help them cook up evenly and thinner slices will cook up quicker.  That’s part of the goal with this meal.  Quicker.

Add the diced onion to the potatoes and carrots to let the onions cook and caramelize with them.  That’s a flavor enhancer.

Next, stir in the minced garlic when the potatoes and carrots are about halfway cooked.  I usually add the minced garlic later when frying.  Garlic cooks up quickly and it can burn easily which gives it a bit of a bitter taste.

Zucchini cooks up quickly so it’s best to added it later.  This prevents it from getting over cooked and getting mushy.

This is the point that I will have added salt and pepper one or twice to this recipe.  I want to add the salt flavor to the vegetables and not to the ham.  When adding the salt and pepper to the vegetables before the ham is added, the vegetables will absorb the salt.  Then when you add the ham, it will not absorb that salt flavor.

Lastly, add in the cubed ham.  Since it’s fully cooked, it only needs to heat up.

Serving

Did anyone notice how pretty these vegetables and the ham look together?!  We eat with our eyes first!

Once this Easy Weeknight Ham and Zucchini Skillet meal is cooked it can be plated and served.  Since it has plenty of vegetables, I will serve this with Garlic Bread or with Strawberry Fluff or Carmel Apple Cheesecake Salad.

Ingredients

  • 4 Tbsp Olive Oil
  • 1 cup Carrots
  • 4 medium Potatoes thinly sliced
  • ¼ cup Onion diced
  • 1 tsp Garlic minced
  • 2 cups Ham diced
  • 1 cup Zucchini diced
  • 1 Salt & Pepper

Instructions

  • Over medium heat, warm up olive oil in a large fry pan. Add the sliced potatoes, carrots, and onions stirring occasionally.
  • When the potatoes mixture is about half cooked add the minced garlic, ham, and zucchini.
  • Add salt and pepper to taste.
  • Continue cooking and occasionally stirring until the vegetables are fork tender.
  • Serve immediately.
