Caramel Pecan Sticky Rolls

These Easy Caramel Pecan Sticky Rolls are quick and easy to make when you want a quick caramel roll for breakfast without all the mess or the work.   You put these together in the morning and in less than an hour you can have warm gooey caramel pecan rolls.

The caramel sauce on these rolls has the perfect level of sweetness and caramelly goodness with the delicious slight crunch from the pecans.

Ingredients

These start off with a package of Hawaiian rolls.  No making dough or rising of yeast.  We’re bypassing that step and fast tracking to already made rolls.

The caramel sauce is made of salted butter, brown sugar, corn syrup and the secret ingredient is vanilla ice cream.  Yes, you read the correctly, ice cream.  The ice cream has all the ingredients to make the perfect caramel sauce, sugar, cream, and vanilla.

Pecans are added also, but they can be optional if you prefer not to add them.

Making the Caramel & Assembling

Put the butter, brown sugar, corn syrup and ice cream in a small saucepan.  The ice cream can melt as it heats up.  Over medium heat, bring the ingredients to a boil and have it cook for 1-2 minutes stirring it constantly to prevent it from cooking over.  All of the brown sugar should be dissolved and not grainy.  You want a smoothy and creamy caramel.  If not, cook it a little bit longer.  Remove it from the heat.  Add the pecans.

Line a 9×13 baking pan with parchment paper.  You will want the parchment paper to go up the sides of the pan.  Pour the caramel and pecan sauce on the parchment paper.

Using a knife, score the tops of the Hawaiian rolls.  Do not cut all the way through.  Place the rolls tops down on top of the caramel and pecans.

Baking

Place in the 350 degree preheated oven uncovered and bake for the amount of time on the recipe.  Remove from the oven and let them rest for 7-8 minutes.  Set a timer so you do not wait too long.  You will want to flip the Easy Caramel Pecan Sticky Rolls out of the 9×13 baking pan before serving.  IF you want too long the caramel will set and it will not flip out of the pan well with the caramel and pecan on the rolls.    *Be careful.  It will be hot.*

To flip them out of the pan take a large platter and place it over the 9×13 baking pan.  Using potholders hold the platter in place and the 9×13 baking pan and flip it all in one quick movement.  Remove the parchment paper and spoon any remaining caramel sauce over the rolls and serve.

These Easy Caramel Pecan Sticky Rolls are great as they are or as a side to a breakfast or a brunch.  I like to serve them with an egg dish such as Skillet Eggs or Crescent Egg & Bacon Bites with a fruit platter.  This gives the meal something healthy, something savory, and something sweet.  A little something yummy for everyone.

  • 1 package King Hawaiian Dinner Rolls
  • ½ cup Butter salted
  • cup Vanilla Ice Cream softened
  • ¾ cup Brown Sugar
  • 4 tbsp Corn Syrup
  • 1 cup Pecans chopped

Instructions

  • Preheat the oven to 350 degrees.
  • To make the caramel sauce, in a small saucepan put in the butter, ice cream, brown sugar and corn syrup. Over a medium heat bring to a boil and boil for 1-2 minutes stirring constantly. Remove from heat.
  • Place a sheet of parchment paper in a 9x13 pan. The parchment paper should cover the bottom of the pan and go up the sides of the pan.
  • Add the pecans to the caramel sauce. Then pour the caramel sauce on the parchment paper.
  • Score the tops of the Kings Hawaiian rolls by slicing with a knife, but do not cut all the way through the rolls. Place the rolls top side down on top of the caramel and pecans. Do not separate the rolls.
  • Bake the rolls for 14-16 minutes or until they are golden brown.
  • Remove from the oven and let rest for about 7-8 minutes.
  • Very carefully since the pan will be hot, place a plate on top of the 9x13 pan and flip the sticky rolls over onto the plate.
  • Scoop pecans and caramel sauce on top of the sticky buns. Serve immediately.
