Creamy Apple Coleslaw

This apple coleslaw recipe is very easy to mix up and it tastes creamy and delicious!  It is a perfect addition to a barbeque sandwich or to eat as a salad just as it is.  It’s a taste of summer!

I recently made this Apple coleslaw recipe and served it on Barbeque Chicken Sliders, and it was such a fabulous flavor and texture combination!  You really need to give it a try.

Ingredients

The dressing is made with mayonnaise, sugar, apple cider vinegar, Dijon mustard, and milk which creates that creamy goodness that is associated with many coleslaw recipes.  I and use a coleslaw mix in a bag.  Since we’re mostly two people a head of cabbage is just too much for us.  Plus, sometimes, I just want the convenience of a bag of coleslaw mix.

I like to use a very crisp sweet apple. You should cut it up into matchstick slices.  I do not peel them.  I like the color from the peeling, and you really don’t notice the peelings are on the slices.  Just leave them on and prepare this faster and get the health and nutrition benefits from the apple peelings.

The recipe also calls for sliced almonds.  These add a little bit more texture to the Apple Coleslaw and some visual appeal as well.

Mixing

This is the easy part.  All of the dressing ingredients are whisked together and poured over the coleslaw mix, sliced apples, and almond slices.  Then everything gets a little toss and it’s ready to serve.  Store it in the refrigerator in a covered bowl.

Serving

There are a couple of ways to serve this Apple Coleslaw, as a side dish or as a topping to a sandwich.  It’s great as a side dish to Honey Barbeque Pork Chops.  Cook the pork chops on the grill and serve them with a side of the apple coleslaw.  This just screams summer to me!

If you serve them as a topping for a sandwich I would recommend these Barbeque Chicken Sliders.  They were so delicious together and the textures of the creamy and crispy Apple Coleslaw was perfect together!

Equipment

  • 1 Medium Bowl
  • 1 Cutting board
  • 1 Knife
  • 1 Peeler

Ingredients

  • cup Mayonnaise
  • 2 tbsp Sugar
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • ¼ cup Milk
  • 5 cups Coleslaw Mix
  • 1 medium Apple
  • ¼ cup Sliced Almonds optional

Instructions

  • In a medium bowl make the dressing by combining the mayonnaise, sugar, apple cider vinegar, mustard and milk. Mix well.
  • Slice the apple into matchstick size pieces and add it to the dressing.
  • Mix in the coleslaw mix and the sliced almonds.
  • Serve immediately.
  • Cover and refrigerate any unused apple coleslaw.
