This Cranberry & Almond Green Beans recipe is simple to make, and it tastes amazing.  This recipe is a twist on green beans that is special, yet simple to make even on busy weeknights.  And it’s delicious as well as being colorful.  We all eat with our eyes first, right?

The best part, this side dish is very quick to put together.  And it is a great side dish to serve at any special gathering and quick enough to have on a weeknight.

The Ingredients

I prefer to use frozen whole green beans.  To me, they tend to be tastier and give a better presentation.  If you want them to be bite sized, simply snap them into the desired sized pieces before cooking them.  They snap very easily when they’re frozen.

The dried cranberries add a little tart and sweetness that blends nicely with the flavors of this dish.   The deep red color of the cranberries is really pretty against the green beans.

This recipe calls for slivered almonds.   They add a nice delicate crunch as well.  A package of slivered almonds will be more than you will need.  Good thing they freeze well, and they will stay fresh for months!

The dill is a unique ingredient in this dish.  The little bit of dill gives the green beans more of a fresh taste.  Just give this a try in green beans with a little butter, salt and pepper.  You may like it.

Cooking the Green Beans

The green beans can be cooked using any method you prefer.  It works for them to be steamed, boiled, or roasted.  I prefer to steam the beans since I have a steamer pan that is convenient for me to use.  I think the green beans taste a little less watery when compared to boiled and I can get the softer texture that my family prefers.  Once all of the ingredients are added, the dish will need to be warmed up, which can be done in a pan on the stove, in the oven, or even in the microwave.

Serving

There are many delicious meat choices for these Cranberry & Almond Green Beans to be served with meatloaf, porcupine meatballs, roast beef, fish, pork loin, pork chops, chicken are all great choices.  This side dish is very versatile to compliment any meat dish.  It’s great for holidays too, like Thanksgiving, Christmas, and Easter.  I have even taken it to a potluck, and it was gone immediately!

Equipment

Ingredients

  • 4 servings Green beans, cooked
  • ¼ cup Dried Cranberries
  • 1 tbsp Butter
  • 1 tsp Garlic, minced
  • tsp Dill, optional
  • 2 tbsp Slivered almonds

Instructions

  • Cook the green beans.
  • In a pan add the remaining ingredients and salt & pepper to taste. Stir and put on low heat for a few minutes until the cranberries are heated up. Stir occasionally.
  • Remove from heat and serve.
