Cookies and Cream Cookies are wonderful twist on a homemade cookie. It’s really a cookie within a cookie with the extra little sweet surprise from the white chocolate chips.
The Ingredients
Although these are your basic cookie, they are made into cookies and cream but by adding chocolate sandwich cookies crushed up and mixed in the dough with white chocolate chips too.
To crush the sandwich cookies, I put them in a resealable bag and used a small wooden rolling pin to break them up. A food processor would work too. I would not recommend using the chocolate cookie crumbs that are already ground up and in a box. They only contain the chocolate cookie outsides and none of the yummy white filling from in the chocolate sandwich cookies. They just will not taste the same.
This recipe uses vanilla extract, too. Please check out my post on how to make homemade vanilla extract. This will increase the deliciousness too!
Baking
I like to use a baking stone because I like how my cookies turn on when baked on a stone. If you’re familiar with baking stones they get seasoned with use. I have had mine for several years and they are very seasoned. A baking sheet can be used as well.
I use a medium cookie scoop to put the cookie dough on the baking stone. You don’t need to press them or anything. Leave them in their round ball shape. They will flatten as they bake and be the perfect cookie shape. If you don’t have a medium cookie scoop a tablespoon will work, too.
Once the cookies are done baking, I remove them immediately from the baking stone and put them on a cooling rack. This is where the test of patience comes in. It’s hard to wait until they cool to sample that first one!
Serving
This is the easy part and the best part! These Cookies and Cream Cookies go perfectly with a glass of milk! Well, that is not a surprise, is it? And they are especially delicious when they are slightly warm yet.
Happy Baking!
