Perfect for busy weeknights, this dish is not only simple to prepare but also a great way to sneak in some veggies for the whole family.  Let’s see how to make this tasty dish!

Ingredients

Here’s what you’ll need:

  • Quick cooking brown rice
  • Milk
  • Canned chicken, drained
  • Frozen broccoli, thawed
  • Cream of potato soup
  • Garlic, minced
  • All-purpose seasoning
  • Italian seasoning
  • Shredded cheddar cheese

Instructions

Step 1: Preheat Your Oven

Preheat your oven to 350°F (175°C). This ensures your casserole cooks evenly.

Step 2: Baking Pan

Spray or grease a 9×13 baking pan.

Step 3: Assemble the Casserole

You can mix everything in the greased baking pan.  Mix in the rice, milk, canned chicken, broccoli, cream of potato soup, garlic, All-purpose seasoning and Italian seasoning.  Spread it out evenly in the baking pan, ensuring that the broccoli and chicken are well distributed.  Cover with aluminum foil.

Step 4: Bake

Bake for 1 hour or until the rice is tender.  Remove from the oven and add the shredded cheddar cheese.  Return to the oven and bake until the cheddar cheese is melted.

Step 5: Serve and Enjoy

Once done, remove the casserole from the oven and let it cool for a few minutes. Serve it warm, and enjoy the comforting blend of flavors! This dish pairs perfectly with a Strawberry Pecan Salad and some warm garlic bread.

Tips for Customization

  • Add More Veggies: Feel free to throw in other vegetables like carrots, cauliflower, or zucchini for added nutrition and color.
  • Spice It Up: For a little kick, add some crushed red pepper flakes or diced jalapeños.
  • Make It Ahead: This casserole can be made ahead of time. Just prepare it, cover it tightly, and refrigerate it until you’re ready to bake. You might need to add a few extra minutes to the baking time if it’s cold from the fridge.

Conclusion

This Chicken Broccoli Rice Casserole is a wonderful one-dish meal that’s perfect for any occasion—be it a family dinner or a potluck with friends. It’s satisfying, full of flavor, and easy to customize to your liking. Give it a try, and you may find it becoming a beloved favorite in your household!
