And just like that, it’s grilling season! This Grilled Honey Glazed Chicken Sandwich is a great way to start the season right. The flavor of the chicken with the cheese, bacon, and grilled pineapples tastes so refreshing and summery.
Marinade
The marinade is a blend of canola oil with minced garlic and the light sweetness of honey. The lemon juice adds a bit if citric to help freshen the marinade and tenderize the chicken and the soy sauce adds a light flavoring. Place all of these ingredients in a resealable microwaveable bowl.
Everything is warmed up in the microwave to soften the honey and help it incorporate in with the other marinade ingredients. The chicken breasts are added and can marinade for 2-12 hours. The longer it marinates the more the meat absorbs the marinade flavors.
Grilling
Once the marinade process is completed it’s time to grill the chicken breasts. Preheat your grill and once it is heated up add the chicken. Grill it until it is no longer pink inside. The grilling time can vary depending on how thick the chicken is and how hot your grill is. For us they are usually about 4-5 minutes per side.
Once the chicken is almost finished cooking, place a slice of provolone or Swiss cheese on each chicken. Grill until the cheese is melted. This will be quite quick.
The pineapple rings get place directly onto the grill grates and grilled a couple of minutes per side until they have the golden-brown grill marks. This brings out the sweetness of the pineapple rings. Canned pineapple works great, but fresh pineapple is a game changer!
You can toast the bun on the grill too. Just butter each bun and place directly on the grill and watch them VERY closely. They will toast up fast! A little tip: This is a great for buns that are getting a bit dry. When they’re toasted no one can tell they were slightly dry.
Serving
To serve the Grilled Honey Glazed Chicken Sandwich place a chicken breast on the bun, top with cooked bacon, lettuce, and a pineapple ring. A good sauce is a thickened teriyaki sauce or mayonnaise. This is a great summertime meal when served with a salad made with the Best Poppy Seed Dressing or with Creamy Apple Coleslaw.

Honey Glazed Chicken Sandwich

- 1 Grill
- 1 Bowl or resealable bag
Ingredients
- 4 servings Boneless Skinless Chicken Breasts
- 2 tbsp Canola Oil
- 1 clove Garlic Minced
- ¼ cup Honey
- 3 tbsp Lemon Juice
- 2 tbsp Soy Sauce
- 4 each Hamburger Buns
- 4 slices Provolone or Swiss Cheese
- 4 each Pineapple Rings
- 8 strips Bacon cooked
- 4 pieces Lettuce
Instructions
- In a bowl mix together the oil, garlic, honey, lemon juice, and soy sauce. Microwave for 30 seconds to get the honey mixed with the other ingredients.
- Pour into a resealable bag or into a bowl and add the chicken. Marinate for 2-12 hours.
- Grill the chicken on medium heat for 4-5 minutes per side or until the meat is no longer pink inside.
- Place the pineapple rings directly on the grill and grill a couple of minutes on each side until there are golden brown grill marks on each side.
- Add a slice of cheese to each piece of chicken and grill until melted.
- Place the chicken on a bun and top with bacon, a pineapple ring, and lettuce.
- Serve Immediately.
