Cheesy Mashed Potatoes

Cheesy Mashed Potatoes is a very simple potato recipe that is kid friendly and easy to make.  These potatoes are quick enough to serve on a weeknight and nice enough to serve at a gathering.  They go well with many different meats and vegetables.

Ingredients

I used Yucon gold potatoes, but really any potatoes will work.  I just love the flavor of Yucon Gold potatoes.  You will need to cook and mash the potatoes.  They can be peeled, boiled, and mashed or you can use a potato ricer.  A potato ricer is my favorite and handiest kitchen tool.  If you are a mashed potato family, you will benefit from one of these.

Please check out this link that shows how to use a potato ricer.  You can make mashed potatoes and not peel any potatoes.  It’s very easy and much quicker to make mashed potatoes for a large group of people, like at Thanksgiving time, too.

The remaining ingredients are butter, milk, All-Purpose Seasoning, and cheddar cheese.  I use a premix All-Purpose Seasoning.  It’s a real time saver in the kitchen.  This recipe does not have a lot of ingredients for a side dish, yet it has really a delicious flavor.

Cooking

Basically, you prepare mashed potatoes by cooking them and mash them.  Once the potatoes have been mashed, you will add in all of the other remaining ingredients.  You may want to add a little more milk to get your desired mashed potato consistency.  After the potatoes and he ingredients are stirred in, and they will need to be microwaved for 1 minute and stirred again.  This will need to be repeated until the cheese is fully melted and mixed in.  Then they are ready to enjoy.

Serving

One of my family’s favorite meats to serve with Cheesy Mashed Potatoes is Ground Beef and Rice Skillet with corn too. They are a great side dish to serve with Grilled Teriyaki Pork Chops or Quick Easy Meatloaf.

  • Prepare your mashed potatoes. You can bake or microwave the potatoes in their skins and press them through a potato ricer, or peel and boil them in a medium saucepan then mash them.
  • Put your mashed potatoes in a medium bowl. Add the butter, milk, all-purpose seasoning, and shredded cheese. Stir well.
  • Microwave the potatoes for 1 minutes, stir, and repeat until the cheese is melted and the potatoes are hot.
  • Serve immediately.
