Super Simple Fruit Pizza is a great dessert to bring to any gathering or potluck. By simply changing the fruit you can go from an everyday look to a festive holiday look.
When I make this fruit pizza, I put it in a 9×13 baking pan that has a lid. Simply because it’s easier to store in my fridge and it’s easy to transport. It can be made on a pizza pan too. Your baking times may be slightly different.
The Ingredients
The crust is already made sugar cookie dough from the refrigerator section of the grocery store. Simple press it into the bottom of your 9×13 baking pan and bake it until it is golden.
For the sauce, it is cream cheese, sugar, vanilla and whipped topping. It has a no bake cheesecake kind of flavor to it.
The fruit is where you can really let your creativity go wild! You can use any fruit(s) and combination of fruits. Some suggestions are, strawberries, blueberries, raspberries, blackberries, kiwi, red or green grapes halved, canned mandarin orange segments, pineapple fresh or from a can, etc… Avoid fruits that will discolor such as bananas, apples, etc… It just won’t look as nice.
Mixing it
It helps to have the cream cheese at room temperature then mixing it to get it smooth. Now it’s time to add the sugar and vanilla, beat until smooth. Then add in the whipped topping. Once the cookie crust is at room temperature you can spread the cream cheese layer on the cookie crust, and you can top with your fruit.
Adding the Fruit
You can use different colored fruit to create a festive seasonal look. For example, strawberries and blueberries for a patriotic look that is great for Memorial Day, July 4th, or any patriotic celebration. You can use strawberries and green grapes or kiwi for a Christmas look. For St. Partrick’s Day you can use kiwi and green grapes. You can use it for sports teams. Use purple grapes and pineapple for purple and yellow/gold teams. Maybe strawberries and pineapple for red and yellow/gold teams. How about blue berries and mandarin orange segments for blue and orange teams.
The are no rules for the patter n and you do not even need to put the fruits in a pattern. You can mix the fruits lay them on the top. That can be just as pretty, and you’ll get each fruit on every piece. Or you can determine a pattern and lay them out in a pattern like have done. I do it either way, it just depends on my mood and where it is being served.
For your next potluck give the Super Simple Fruit Pizza a try! I bet you go home with an empty pan.
