No Bake Funfetti White Chocolate Cheesecake is an extremely easy and quick dessert that is fun to look at as well as fun to eat! This is a fun pie to make for kids, adults, and for potlucks or summer picnics. You can use seasonal sprinkles make this no bake Funfetti White Chocolate Cheesecake go with your celebration or just simple funfetti.
This is such a simple pie recipe that it’s a great one to make together with children. Plus, the kids love the sprinkles.
Ingredients & Mixing
The first ingredients is cream cheese that needs to be mixed until it is smooth. Next, add vanilla and mix some more. I use a homemade vanilla which gives it a wonderful added vanilla flavor boost.
The white chocolate chips will need to be melted before being added to the cream cheese mixture. Measure and put the white chocolate chips into a microwave safe bowl. Microwave for 30 seconds, stir, and repeat until the chips are melted. For my microwave it usually takes 3 times. Be careful with this step to not over microwave your chips as they will seize and get chunky and gritty. That cannot be fixed. To avoid seizing, microwave in 30 second intervals, stir, and repeat until the chips are melted after stirring.
Add the melted chips to the cream cheese mixture and mix well to fully incorporate the melted white chocolate chips with the cream cheese mixture.
Once the chips are fully mixed with the cream cheese, fold in the whipped topping. Lastly, after the whipped topping is mixed in gently fold in the sprinkles.
You can add any type of sprinkles you’d like. The mix I had for the pie pictured was blue winter sprinkles. It had snowflakes. When it is eaten soon after making, some of the bigger pieces in the sprinkle mix were still firm and crunchy. By the next day all of the sprinkles are soft. So have fun with the sprinkles!
Serving
Just before serving I used whipped topping in a can to make the decoration along the pie edge and then put on the sprinkles.
I would serve this No Bake Funfetti White Chocolate Cheesecake at a work potluck, for a child’s party, or at a July 4th picnic celebration using red, white, and blue sprinkles.

Equipment
- 1 Mixer
- 1 Rubber spatula
- 1 Small microwaveable bowl
Ingredients
- 1 8 oz Cream cheese room temperature
- 1 tsp Vanilla
- 1 cup White chocolate baking chips
- 1 8 oz Whipped topping
- 4 tbsp Sprinkles
- 1 6 oz Ready Made Graham Cracker Crust
- 1 Whipped topping for garnishing
Instructions
- In mixing bowl, whip the cream cheese until smooth.
- Add in the vanilla and whip again.
- Place the white chocolate chips into a microwaveable bowl. Microwave for 30 seconds and stir. Continuing microwaving in 30 second increments and stirring until the white chocolate chips are completely melted.
- Slowly pour the melted white chocolate chips into the cream cheese mixture and mix until it is fully incorporated.
- Fold in the whipped topping.
- Once the whipped topping is fully incorporated in gently fold in the sprinkles.
- Spread into the graham cracker crust. Garish with whipped and sprinkles.
- Chill for 2 hours and serve.
