Monster Rice Crispy Bars is a no bake recipe that is kid friendly and a quick easy dessert to make.  When you’re in a pinch and you need something that is different and quick to put together this is your recipe.  And the best part, it does not heat up your home.

Everyone loves Monster cookies and Rice Crispy Treats.  Well, how about the two together as one bar?  This bar is what you’d get if a Monster Cookie and a Rice Crispy Treat bumped into each other.  This bar is the perfect combination of Rice Crispy cereal, oatmeal, peanut butter, chocolate and M&M’s.

Making the Bars

In a large pan put in the corn syrup, sugar, and the peanut butter.  The peanut butter can be plain or chunky.  It’s the cook’s choice.  These get cooked together over low heat.  Stir them often to prevent scorching.

Once they are mixed together remove the pan from the heat and mix in the Rice Crispy cereal and the oatmeal.  Mix well to coat the cereal and oatmeal.  Put into a greased 9×13 baking pan pressing them firmly into the pan.

In a microwaveable bowl put the chocolate chips and the peanut butter.  Microwave in 30 second increments stirring after each time until the chocolate chips are melted after stirring.  Don’t overcook your chocolate chips or the chocolate will seize and not be smooth.  Spread on top of the bars.

Sprinkle on the mini M&M chocolate pieces.  Lightly press them on to the chocolate topping.

Serving

Let the bars set until the chocolate has set.  You can do this on the counter or if you want them ready quicker you can use the refrigerator.  Then slice the bars and serve them.  These Monster Rice Crispy Bars are great with a glass of milk.  For a great kid friendly meal serve Spaghetti and Meatsauce French Bread with these Monster Rice Crispy Bars as a dessert.

Ingredients

  • 1 cup Corn Syrup
  • ½ cup Sugar
  • 1 cup Peanut butter
  • 5 cups Rice Crispy Cereal
  • 1 cup Old Fashioned Oatmeal
  • 1 pkg Milk Chocolate Chips
  • 1 tbsp Peanut butter
  • cup Mini M&M's

Instructions

  • In a large pan over low heat stir in the corn syrup, sugar, and 1 cup peanut butter until it comes to a boil. Stirring it constantly.
  • Remove from heat and mix in Rice Crispy cereal and oatmeal. Spread evenly into a greased 9x13 pan.
  • Melt chocolate chips and 1 tbsp peanut butter in a microwaveable bowl in 30 second increments, stirring between each one. Repeat until the chocolate chips are melted and smooth.
  • Spread over the bars. Sprinkle with the mini M&M's. Lightly press the M&M's into the chocolate topping.
  • Let set or chill to set. Cut when cooled.
