  • Pat fish fillets dry with a paper towel and place on a plate. Sprinkle Old Bay Seasoning on your fish fillets.

  • Spray the top of the rolled-up fillets with olive oil or cooking spray.
  • Sprinkle Old Bay seasoning on the top of each fillet.

Notes

This recipe works for freshwater fish such as walleye or bass, or white fish like tilapia.
A 6 oz sized fish fillet is approximately a 5-inch x 3-inch fillet.  This recipe works with larger fillets, and it works with slightly smaller fillets too.  If you are using smaller fillets just fold them over and secure with the toothpick.  Adjust your baking times accordingly for the size of your fillets.
A tip, to help fish taste more like fresh fish and less fishy, soak the fish in 1-2 cups of milk for a few hours or overnight. Overnight is best.  This will also help prevent your home from smelling like fish as it cooks, too.
