Chili Lime Sweet Corn

Chili Lime Sweet Corn is a great way to make and serve sweet corn when you want something delicious, yet a little bit different.  It has only 5 ingredients and it is quick and easy to make.   This recipe is like Mexican Street Corn meets buttered sweet corn.  It has a great balance between the sweet corn and the other ingredients.

Ingredients

For starters you need good, sweet corn since that is the basis for this recipe.  Farmer’s Markets are a really great place to find some good homegrown sweet corn.  You may even be lucky enough to know someone that grows it.  But if neither are available for you, I have noticed that sweet corn in the grocery stores is very good too.  At least it is in Idaho.  And it makes it convenient to buy too.

You will need to salted butter, mayonnaise, pepper to taste, and Tajin.  If you are not familiar with Tajin, it can be found in the Mexican section in your grocery store.  Most grocery stores carry it since it is a staple in many Hispanic foods.  Tajin is a unique mixture of mild chili peppers, lime, and sea salt.  It is not hot or spicy, yet it is very flavorful.  It is so good.

Cooking

Husk and prepare your corn for cooking.  Boil it in a pot on the stove until the color turns a darker yellow.  When it’s raw the color is a pale yellow, and the color turns a golden yellow when it’s cooked.  Remove the corn from the pot, dry it, and set it aside.  I just dab the corn with a paper towel.

You will need a pan that has a large bottom that all 4 ears of corn fit on.  Put your burner on to medium heat and add the butter, mayonnaise, Tajin, and pepper to taste.  Using a whisk, whisk the ingredients together until the ware melted and evenly mixed together.  Add the corn.

Fry, or cook, the corn until it is evenly coated with the butter mixture.  Fry until the butter become brown butter.  As the corn cooks, spoon the butter mixture over each ear of corn.

Serving

I would serve Chili Lime Sweet Corn as a side dish with Honey BBQ Pork Chops or with Marinated Steak Cubes.  It is even great with grilled burgers and the Very Best Potato Salad.

  • 4 ears Sweet Corn husked
  • 2 tbsp Salted Butter
  • 3 tbsp Mayonnaise
  • 1 tsp Tajin
  • 1 Pepper to Taste

Instructions

  • Husk the corn. Place it in a large pot on the stove, add water, and boil it until the kernels turn a dark yellow. It will take about 5 minutes after the water comes to a boil.
  • Remove the ears of corn, dry, and set aside. Drain the water out of the pan and dry it out with a paper towel.
  • Select a large frying pan, one that is large enough for your ears of corn to fit the bottom of the pan. Put the pan on the stove on medium heat. Add the butter, mayonnaise, tajin, and the pepper.
  • Whisk the ingredients together until the butter is melted and the mayonnaise is whisked in.
  • Add the ears of corn to the pan. Spoon the butter sauce over the corn and let it lightly fry. Cook until the ears have been fully coated in the butter mixture.
  • Remove from the heat and serve immediately.
